When burned inside the barrel, they release sulfur dioxide (SO2) gas, which effectively kills wild yeast, mold, and spoilage bacteria. This “burning” process is the traditional and most effective way to prevent the growth of Acetobacter and Brettanomyces in barrels that are between wine fills.
Wine Maker’s Safety Note: Burning sulfur produces toxic gas. Always use a sulfur disc holder (bung-mounted) and perform the operation in a well-ventilated area. Never burn sulfur in a barrel that still contains alcohol vapor or spirits. After burning, ensure the barrel is sealed tightly with a solid bung to trap the gas.
