Description
Weyermann® Pale Wheat Malt is the essential base grain for authentic Hefeweizens, American Wheat beers, and Witbiers. This premium German malt provides the characteristic bready, slightly sweet wheat flavor and high protein content needed for excellent head retention and a creamy mouthfeel. It is kilned to a very pale color, allowing it to be used for the lightest beer styles while providing the enzymatic power needed for successful mash conversion.
Brewery Mash Tip: Wheat malt lacks a husk; if you are brewing a recipe with more than 50% wheat, consider adding rice hulls to your mash to prevent a “stuck sparge.” Mash at 150-152°F (65-66°C) for the best balance of sugar extraction and mouthfeel. High protein levels also make this a great grain for hazy IPAs.
