Description
Briess Cherrywood-Smoked Malt is a unique specialty grain produced by smoking high-quality 2-row barley over aged cherrywood. This process imparts a smooth, sweet, and fruity smoke character that is significantly more delicate than traditional peat-smoked or rauchmalts. Kilned to approximately 5° Lovibond, it adds a complex campfire-like depth without the harsh phenolic bite. Essential for producing authentic Smoked Porters, Scottish Ales, and specialized experimental brews.
Brewery Mash Tip: Use Cherrywood Smoked malt at 5-10% of the grist for a subtle “hint of smoke,” or up to 60% for a robust, smoke-forward specialty beer. It has full diastatic power and can be mashed as a base malt. Store the bulk bag in a cool, dry area and ensures it is tightly sealed to prevent the smoke aromatics from fading or affecting other malts in your brewery.
