Description
Weyermann® CaraRye® is a drum-roasted caramel malt that imparts a deep copper-to-brown color and a unique, spicy rye character. Kilned to approximately 65° Lovibond, it enhances malt complexity with notes of bread crust, biscuit, and a characteristic rye earthiness. This malt is excellent for building body and improving head retention in Rye IPAs, Dunkels, and specialized seasonal ales, providing a smooth mouthfeel and persistent foam.
Brewery Mash Tip: CaraRye® does not contain diastatic power and must be mashed with base malts. Use it at 5-15% of the total grist to add noticeable rye “snap” and a rich reddish hue. Because rye can increase mash viscosity, consider adding a small amount of rice hulls to ensure a smooth sparge and prevent a stuck mash.
