Description
Weyermann® Carafoam® is a drum-roasted caramel malt that is the industry secret for achieving incredible head retention and a creamy mouthfeel. Kilned to a very light 1.5-2.4° Lovibond, it adds significant body and foam stability without altering the color or flavor of the beer. This makes it an essential ingredient for any style where a persistent, rocky head is desired, from delicate Pilsners and Helles to robust IPAs and Stouts.
Brewery Mash Tip: Carafoam® should be used at 5-15% of the total grist for the best results. Because it is so light in color, it won’t impact the clarity or hue of even the palest lagers. It does not require mashing for sugar conversion (it can be steeped), but including it in the main mash ensures the best integration of the foam-active proteins. It pairs perfectly with any base malt.
