Two independently controlled chambers with cordierite brick-lined ceilings and Lightstone FibraMent hearths store and radiate heat for fast recovery and uniform bakes. A 240,000 BTU output and 300°F–650°F range let you dial in New York–style pies, Sicilian pans, or calzones.
Each 60″ x 36″ deck with 7.5″ clearance streamlines high-volume service, staging multiple pies, trays of garlic knots, or par-baked shells at once. Independent top and bottom heat dampers per deck fine-tune top color and bottom crisp, reducing remakes and keeping tickets moving.
A fully welded stainless steel exterior, aluminized steel interior, and spring-balanced, insulated doors support temperature stability and day-to-day durability.
